The following is a delicious treat from Atkins diet recipes. Most Asian soups are light, filling and take very little time to prepare. If you enjoy a little heat, add bit of Asian chili oil or paste before serving. •6 cups reduced-sodium chicken broth •4 tablespoons lite (reduced-sodium) soy sauce •2 cups bok choy, sliced (Chinese cabbage; use half leaves and half stems) •4 ounces exotic mixed sliced mushrooms (about 2 cups) •1 tablespoon fresh ginger, sliced or grated •1 garlic clove, very thinly sliced •1 Thai or Serrano chili, seeded and minced •1 cup diced tomatoes •3 green onions, sliced (about 1/2 cup) •6 ounces soft or firm tofu, cut into 1/2 inch dice •1 medium carrot, peeled and shredded (about 1/2 cup) •1 1/2 tablespoons fresh cilantro, chopped 1.In a large saucepan, bring broth and soy sauce to a boil. Reduce heat; add bok choy, mushrooms, ginger, garlic and chili. Simmer for 5 minutes, until bok choy is tender yet still crisp and mushrooms are softened. 2.Add tomatoes, green onions, tofu and carrot. Heat through for 1 minute. Stir in cilantro just before serving.
Today was very stressful, even for a Monday! I got to work at 6, and didn’t leave until 430, and that was because I had an appointment, and had to sneak out to get there on time! It looks like tomorrow will be a long day too… I had my second accupuncture appointment today, and this time I was prepared. One part of last weeks session that I didn’t like was that there was no music, so, I brought my Zune, and listened to some really relaxing songs during my treatment. I think it really helped. It didn’t hurt nearly as much as the first time. Only a little in the eyebrow region, but that was it. She used a lot more needles this time too…even down my neck! I think it was a nice way to wind down before heading home. And I do think it’s helping my allergies! Hooray! I had the most delicious snack today. I took a nectarine, cut it in half, and put a pat of butter in each half, then I sprinkled stevia and oats on it, and put it in the microwave for 2 minutes. It was hot and steamy and sooo good! and only 3.5 points! Next time, I think I’ll cut the butter in half, I think it would have been 2.5 points then. I had a Smart Ones Salisbury Steak with Macaroni for lunch today, and I think if I wasn’t using the golden rules, I would have been starving! I know it’s only 4 points, but goodness, it was so tiny! I was still hungry after eating it, so I had a 90 calorie pack of mini rice cakes, and then I was satisfied. It’s only 730, but I’m so tired, I’m going to call it a night.
Okay - back on track. After a month of eating what I want (and, I must add, feeling like crap), I’m back on Atkins and getting ready for the withdrawl I will have for the next two days!! Luckily I didn’t gain anything - it has been a stressful month. But I’ve moved and my life is getting back on track - and that includes my commitment to getting myself in shape. I also hope to reconnect with people who were so supportive of me in February when I started this. AND it looks like there are a lot of good new recipes!!
