All right…so we had 2 weeks living at Mom’s house…and as I said earlier, she was DETERMINED that I eat what she made. I don’t think my husband believed how demanding she can be…but quite literally, she’d ask me, “What do you have for dinner tonight?” I’d say “Chicken Parmesan” and she’d say “Great, you can eat my chicken parmesan!” Now this doesn’t take into account that Jenny Cuisine often substitutes things like soy and low calorie cheese in their chicken parmesan…not to mention that the chicken is little tiny cubes of roasted chicken in a bed of whole grain pasta. Mom’s version of said recipe is half a chicken breast, breaded and baked and covered with mozzarella with plain ol’ spaghetti and regular pasta sauce. Definitely a huge calorie difference! But I stuck to eating the huge amounts of veggies and minimal amounts of main dish. Also drank huge quantities of coffee to ward of sweets cravings because in addition to all this, she had candy on every horizontal surface possible and made fresh desserts every day. I ended up walking the block and hitting the local Curves 4 times during the trip!! I did pretty good for the first 5 days, and then I lost the battle and just ate whatever I wanted. It’s really difficult to face such a worthy adversary for such a long time. Note to self… next visit should be 5 days or less! All in all, not too bad. Came back and weighed in at 252.8 (lost .2) so I pretty much stayed even with all that happened…so I’m pretty thrilled.
